This recipe is a favorite to many family and friends and is requested quite often! Use the Beef Taco Meat recipe in these delicious enchiladas. Serve these with Mexican Rice, Refried Beans, Guacamole, Pico de Gallo, and sour cream for a traditional Tex-Mex meal.

Beef Enchiladas with Red Sauce

Ingredients

  • 3 Tablespoon Flour
  • 3 Tablespoon Chili powder
  • 3 Tablespoon Olive oil
  • 4 cups water
  • 2 8 ounce Tomato sauce
  • 1 teaspoon Sugar
  • 1 1/2 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoon garlic powder
  • 1 pound Beef Taco Meat
  • 12 Tortillas flour or corn
  • 1 pound Cheese (cheddar or Mexican style)

Instructions

  • In a large sauce pan, add Flour, Chili powder, and oil. Heat with a little water and whisk with a whip until the flour has no lumps. Add the rest of the water, Tomato sauce and the spices. Simmer for 15-20 minutes.
  • Meanwhile make Beef Taco Meat.
  • In a greased casserole dish, add a little sauce to the dish. Place 1-2 Tablespoon of meat onto the tortilla, roll up and place the seam side down into the dish. Continue with the meat and tortillas until completed. Pour the sauce over all and sprinkle with cheese.
  • Bake at 350F degrees for 15-20 minutes.
