Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 3 Tablespoon sugar
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/4 cup olive oil extra virgin

Instructions

  • Preheat oven to 425F
  • In a mixing bowl, stir together flour, cornmeal, sugar, baking powder, and salt.

  • In another bowl, beat eggs, milk, and oil together.
    2 eggs, 1 cup milk, 1/4 cup olive oil
  • Add the liquid matter to the flour mixture and stir just till batter is smooth. Do not overbeat the batter.
  • Pour the batter into a greased baking pan. Bake in the preheated oven for 20-25 minutes (color should be golden brown).
